For 4 people:
3 tins of tuna in vegetable oil,
1 medium onion,
70 cc. of olive oil,
5 grammes of pepper,
1 pinch of salt,
PreparationFinely chop the onion and sauté in a frying pan with a little oil and a pinch of salt.
When it begins to colour, add the tuna in vegetable oil after draining and flaking it.
Fry for a few more minutes.
Beat the eggs very well with chopped parsley and add them to the above mixture. Stir well and add salt and pepper to taste.
Put it into a frying pan which has been previously greased with a little oil and fold over onto itself until the egg has set.
